It is the time of veloutés, country soups, pig cooked as on the farm, Pot au Feu served in a casserole, Braserade, pan-fried frogs' legs, cheese fondues (including the now famous Fondue aux Truffes) accompanied by a basket of French toast and a large buffet of old-fashioned tarts.
